Coconut Pesto Chicken Kabobs

RECIPE

Ingredients:

  • 1 1/2 cups of fresh basil
  • 1/4 of a cup of Marcona Almonds
  • 4 garlic cloves
  • 1/4 cup of grated vegan parmesan cheese
  • 1 tsp of Himalayan salt
  • 1/4 cup of coconut oil
  • 1 tbs nutritional yeast

Directions:

  • Pesto- Combine all the ingredients in a food processor until smooth
  • Mix the pesto and cubed chicken in a large mixing bowl
  • Skew 4 cubed Chicken pieces on each skewer
  • Cook on a grill for 12-15
