Green Goddess Zoodles

These delicious Green Goddess Zoodles are truly a treat! They’re tasty alternative to pasta with amazing nutritional benefits, having less than 100 calories per serving! What’s even better is that all the ingredients are natural & WHOLE foods with no additives or anything artificial. The dressing is made with all raw foods (meaning not heated), therefore you get all the natural live enzymes that are great for digestion.

RECIPE

Ingredients:

  • 2 lemons juiced
  • 2 Avocado
  • 1 cup spinach
  • 3 cloves garlic
  • 1 bundle (1 ½ cups) Cilantro
  • ½ cup Basil
  • ½ cup tarragon
  • ½ tsp of pepper
  • 1 tsp kosher salt
  • 3 tbsp olive oil
  • Sprinkle of Vegan Parmesan
  • 4 cups of  Zoodles
  • (2 cups spiralized zucchini noodles , 2 cups spiralized  squash noodles)
  • 1 cup vegetable broth
  • 1 cup heirloom cherry tomatoes

Directions:

  • Place cherry tomato on baking sheet, spray with Olive Oil, salt and pepper. Place in oven on 400 degrees for 20 minutes
  • Add all ingredients for the Green Goddess Dressing in the food processor and blend together:  2 juiced lemons, 2 chopped avocados, 1 cup spinach, 3 cloves garlic, 1 bundle (1 ½ cups) Cilantro, ½ cup Basil, ½ cup tarragon. ½ tsp of pepper, 1 tsp kosher salt, 3 tbsp olive oil
  • Cook the Zoodles: Heat the vegetable broth on high heat until it comes to a boil. Once it boils add the zucchini and squash noodles. Cook for 5 minutes of until desired texture.
  • Drain the zoodles and place in a bowl
  • Add 6 tbs of the Green Goddess Dressing (the reminder can be saved and used for other dishes) and mix together.
  • Top with baked cherry tomatoes & sprinkle with vegan parmesan
  • Enjoy!
