Jackfruit Tacos

As Summer comes to an end, this is the perfect recipe for your last BBQ of the season! If you’re craving comfort food and miss the taste of meat, this taco is for you! Not only is this dish gluten free, nut free, soy free and dairy free, it’s also vegan! Jackfruit is a tropical fruit that has a very similar texture to meat and/or pulled pork and is native to southeast Asia. It can be found in Indian, Thai, and Balinese cuisine, and it happens to be the national fruit of Bangladesh.

Nutrition Benefits:

Each ½ cup of jackfruit pieces contains only 71 calories, 1.3 grams of protein, 18 grams of carbs, and 0.5 grams of fat. It is also high in magnesium, vitamin C, calcium, and potassium. Jackfruit can be bought at any health store and is available in a variety of flavors. We chose to use a BBQ flavor for our cauliflower tacos!

RECIPE

Ingredients:

  • 1 package of BBQ jackfruit
  • 1 package of cauliflower taco shells (spray w coconut spray, toast 2 minutes)
  • Cabbage slaw ( 1 cup white Napa and 1 cup purple cabbage) with dried figs (4 figs)
  • and chopped almonds (1/3 cup)
  • 2 tbs sliced watermelon radish
  • 2 tbs Algae Oil or Olive Oil
  • 1 pinch Himalayan salt
  • 10 cracks pepper
  • BBQ Corn (Organic) on the cob with Coconut spray  & Seasoning
  • *optional add lime wedge to taco

Directions:

  • Corn:  spray with coconut oil and seasoning. Place on grill for about 20-25 min
  • Cook the BBQ Jackfruit in a cast iron skillet for 5-7 min
  • Coleslaw: mix the cabbage in a large bowl. Add dried figs, sliced almonds, sliced watermelon radish, olive oil, salt and pepper and mix.
  • Taco shells: lightly spray each one with coconut oil spray and place in a toaster or oven for 5 min.
  • Place the cabbage salad on the taco shells, add the coleslaw and top with grated corn. If desired, add a squeeze of lime!
